In the dye panel there's two new button icons over the outfit slot. Clicking the Helmet icon shows the dye slots for your character, clicking the Horseshoe icon shows the dye slots for your mounts. It's kind of funny how the mount icon is a horseshoe, when horses are basically extinct within all playable territories. Charr ate them all, you know?
I think the jackal has the coolest lore behind it, and the skimmer is the one I find most original. The raptor is probably the least exciting functionally since it's basically the standard speed boost mount, but I love that it's a raptor - something that would be a premium skin or rare drop in most games.
If we assume that mounts operate in allied territory. The speed boost is already provided by guild tactics speed buff of 25% the mount speed conflicts with that. Which is where you can claim "power creep." BTW, I dislike most of the implementation of guild buffs. So now we must adjust that because of mounts. WGflL.
