By the final season of Game of Thrones, the differences between George Martin’s saga and HBO’s TV series have become incredibly big. In the books, there are characters we’ve never heard of. In the show, some characters are dead but they are still alive in the books. It is impossible to guess how the fight for the Iron Throne will end in the books.
Personally, I think that the books ARE better overall. The plots seem both tighter (less gratuitous tits 'n' gore) and more full (characters and subplots that didn't make it into the show). To speak specifically to which will keep you on the edge of your seat more, I think the answer is the books.

Cersei was stripped of most of her complexity; Arya, who was very personable, outgoing, and friendly in the books became antisocial; Daenerys also lost a lot of her complexity; Sansa was probably one of the most loving and empathetic characters in the books and the show turned her into a cold shell in comparison to her book counterpart.
